Banana, Oat & Dark Chocolate Protein Muffins

Ingredients
- Nonstick cooking spray
- 2 large bananas
- 2 large eggs
- 1.5 cups fat-free organic protein milk
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 3/4 cup old-fashioned rolled oats
- 1/2 cup golden sugar
- 1/4 cup whole wheat flour
- 2 tablespoons vanilla protein powder
- 1-1/4 teaspoons baking powder
- 3/4 cup dark chocolate chips
- 1/2 cup chopped Roche Bros. roasted salted almonds
Instructions
Preheat oven to 350°; line 12-cup standard muffin pan with baking cups and spray with cooking spray. In large bowl, with fork, mash bananas; whisk in eggs, milk, oil and vanilla extract. Stir in oats, sugar, flour, protein powder and baking powder; fold in chocolate chips. Divide batter into prepared cups; sprinkle with almonds. Bake muffins 25 minutes or until toothpick inserted in center comes out clean; cool 10 minutes in pan. Makes 12 muffins.
