BBQ Rotisserie Chicken Flatbread Pizza

By using pre-roasted rotisserie chicken and pillowy Stonefire Naan, you can skip the dough prep and dive straight into the good stuff: a three-cheese masterpiece featuring sharp cheddar, melty shredded mozzarella, and creamy buffalo mozzarella cubes. Layered with zesty BBQ sauce, thin red onions, and a kick of pickled jalapeños, this flatbread is baked directly on the oven rack for a satisfyingly golden crunch.
Ingredients
- 1 Stonefire Naan
- 1/2 cup of BBQ sauce + 1/4 cup of BBQ sauce
- 1-2 tbs of olive oil
- Salt, pepper, garlic powder
- 1/2 cup of shredded mozzarella cheese, divided
- 1/2 cup of shredded cheddar cheese
- About 7 cubes of buffalo mozzarella
- 1 cup of Roche Bros. Rotisserie Chicken - white and dark meat mix
- About 10 thinly sliced red onion
- About 10 pickled jalapeños
Instructions
Broil plain flatbread 5 minutes on each side until crispy. Remove and set aside. Preheat oven to 400°F Prep the toppings: - Pull chicken and season with salt, pepper, and garlic powder - Slice red onions thin - Cube buffalo mozzarella - In addition, lay out olive oil, salt/pepper/garlic powder, BBQ sauce, shredded mozzarella, shredded cheddar, pickled jalapeños Brush olive oil around perimeter of flatbread and sprinkle with salt and garlic powder Spread 1/2 cup of BBQ sauce to the edges of pizza Sprinkle cheddar cheese on top Top with Roche Bros. rotisserie chicken Top with red onions Sprinkle with 1/4 cup of shredded mozzarella Top with jalapeños Top with buffalo mozzarella Top with 1/4 cup of shredded mozzarella Drizzle 1/4 cup of BBQ sauce over top Place flatbread directly on oven grates and bake for 12-15 minutes. It is done once buffalo mozzarella has fully melted (that takes the longest) Use a pizza slicer to slice down the middle lengthwise, and then perpendicular 3 times for 6 pieces total
