Chicken & Watermelon Salsa Tacos
Brighten your meal with these Chicken Watermelon Salsa Tacos! Warm tortillas filled with shredded chicken, topped with a refreshing watermelon-lime-cilantro salsa, creamy avocado, feta, and a dollop of Greek yogurt. A perfect, light, and flavorful bite!
Ingredients
- 1 cup chopped watermelon
- 1/4 cup chopped red onion
- 2 tablespoons fresh lime juice
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon olive oil
- 1/8 teaspoon salt
- 8 (6-inch) corn tortillas
- 1.5 cups shredded skinless rotisserie chicken breast meat, warmed
- 1 medium avocado, peeled, pitted and sliced
- 1/3 cup crumbled feta cheese
- 1/4 cup plain nonfat Greek yogurt
Instructions
In medium bowl, toss watermelon, onion, lime juice, cilantro, oil and salt. Makes about 1.5 cups. In batches, on griddle or in large skillet, heat tortillas over medium-high heat 4 minutes or until lightly browned, turning once. Serve chicken tortillas topped with watermelon mixture, avocado, cheese and yogurt.
