Citrus and Herb Sheet-Pan Salmon

Bring a little sunshine to your dinner table with this vibrant, flavor‑packed sheet‑pan salmon. Nestled on a bed of thinly sliced lemon and orange, the Norwegian salmon gently roasts until perfectly tender, soaking up all that fragrant citrus steam. On the same pan, sweet carrots and crisp asparagus caramelize to perfection—meaning minimal dishes and maximum payoff. Finished with a shower of fresh dill and parsley and served over fluffy pearled couscous, this dish is equal parts refreshing and comforting. It feels special, yet comes together in under 35 minutes—ideal for busy nights or effortless entertaining. Ingredients
- 2 North Coast Seafoods Norwegian salmon filets
- 1 lemon, thinly sliced
- 1 orange, thinly sliced
- 1 bunch carrots, peeled + halved lengthwise
- 1 bunch asparagus, trimmed
- 1/2 cup pearled couscous
- 1/4 cup fresh dill, roughly chopped
- 1/4 cup fresh parsley, roughly chopped
- 3-4 tbsp olive oil (2 tbsp for salmon; 1-2 tbsp for veggies)
- Flaky Salt
- Freshly cracked black pepper
Instructions
Preheat oven to 425°F – Line a sheet pan with parchment paper Prep the vegetables – Toss carrots and asparagus with 1-2 tbsp olive oil, salt, and pepper. Spread evenly on the sheet pan, leaving space in the center for salmon. Build the citrus base – In the center of the pan, layer half of the lemon and orange slices slightly overlapping. This acts like a citrus “rack” for the salmon and keeps it juicy. Season the salmon– Place salmon on top of citrus. Drizzle with 2 tbsp olive oil and season generously with salt and pepper. Lay remaining citrus slices over the top. Roast – Roast for 14–18 minutes, depending on thickness, until salmon flakes easily and veggies are tender with caramelized edges. Prepare grain – prepare pearled couscous on stovetop Herb finish – Remove from the oven. Immediately scatter fresh herbs over the salmon and vegetables. Finish with a squeeze of lemon and a light olive oil drizzle if desired.
