Ingredients

  1. 1 cup 100% pomegranate juice
  2. 2 packages (3 ounces each) cranberry or cherry-flavored gelatin
  3. 1 can (12 fluid ounces) lime sparkling water
  4. 1.5 cups fresh cranberries, thawed if necessary
  5. 3/4 cup pomegranate arils
  6. 1/2 cup chopped walnuts plus additional for garnish (optional)
  7. 1.5 teaspoons lime zest
  8. 1.5 cups whipped topping, thawed

Instructions

  • In small saucepot, heat pomegranate juice to a boil over high heat. Place gelatin in large bowl; whisk in pomegranate juice until dissolved. Stir in sparkling water; cover and refrigerate 1 1/2 hours or until thickened.
  • In food processor, pulse cranberries until small pieces remain. Stir pomegranate arils, walnuts, lime zest and cranberries into gelatin mixture; pour into 5-cup ring mold or 6-cup Bundt® pan. Cover mold tightly with plastic wrap; refrigerate 3 hours or until set.
  • To release ring, gently run thin, flexible spatula around inside edge of ring; dip bottom of pan in hot water for 3 seconds. Place plate over pan; invert to release ring. Cut ring into 12 slices; serve topped with whipped topping and walnuts, if desired.
