Ingredients

  1. Nonstick cooking spray
  2. 1 cup finely crushed butter crackers
  3. 2 tablespoons unsalted butter, melted
  4. 9 slices thick-cut bacon, chopped
  5. 1 large white onion, halved and chopped
  6. 1 package (32 ounces) frozen diced potatoes, thawed
  7. 1 can (10.5 ounces) condensed cream of mushroom soup
  8. 1 package (8 ounces) cream cheese, softened
  9. 1 package (1 ounce) ranch seasoning mix
  10. 2 cups shredded Cheddar cheese
  11. 1.5 cups sour cream
  12. 1 teaspoon garlic powder
  13. 1/2 teaspoon salt
  14. 1/2 teaspoon ground black pepper
  15. Sliced fresh chives for garnish (optional)

Instructions

  • Preheat oven to 375°; spray 13 x 9-inch baking dish with cooking spray. In medium bowl, stir crackers and butter. Makes about 1 cup cracker mixture.
  • In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally. With slotted spoon, transfer bacon to paper towel-lined plate. Makes about 1 1/2 cups bacon.
  • In same skillet with drippings, cook onion 5 minutes or until tender, stirring occasionally; transfer to large bowl. Stir in potatoes, soup, cream cheese, seasoning mix, Cheddar cheese, sour cream, garlic powder, salt, pepper and bacon; spread in prepared dish. Sprinkle casserole with cracker mixture; bake 35 minutes or until top is golden brown and edges bubble. Makes about 8 cups casserole.
  • Serve casserole garnished with chives, if desired.
