Ingredients
- 1 cup packed light brown sugar
- 1 tablespoon ground cinnamon
- 1.5 teaspoons salt
- 2 teaspoons ground black pepper
- 1 teaspoon ground allspice
- 1 teaspoon ground nutmeg
- 1 Certified Angus Beef® boneless strip roast (about 5 pounds)
- 1 cup unsalted butter (2 sticks)
- 1/2 cup Roche Bros. 100% Pure New England maple syrup
- 1/2 cup bourbon
Instructions
Preheat oven to 425°. In small bowl, whisk 1/4 cup sugar, cinnamon, salt, pepper, allspice and nutmeg. In large, shallow roasting pan, place beef roast, fat side up; rub all sides with sugar mixture. Roast beef 15 minutes. Reduce oven temperature to 325°; roast 1 hour 10 minutes or until internal temperature reaches 135° for medium-rare, tenting with aluminum foil if beef is browning too quickly. Transfer beef to cutting board; tent with aluminum foil and let stand 20 minutes. In medium saucepot, melt butter over medium heat. Whisk in syrup and remaining 3/4 cup sugar; heat to a simmer. Carefully whisk in bourbon; reduce heat to low and cook 20 minutes or until slightly thickened, whisking occasionally. Makes about 2 cups glaze. Cut beef against the grain into 12 (1/2-inch-thick) slices; serve drizzled with glaze.
